Hello,
E223 is another name for food grade Sodium Metabisulfite. In winemaking this product may be used for sanitization, but should not be used for stabilizing your wine, i.e. should not be added to your wine for its antioxidative quality.
Moreso, Sodium Metabisulfite is not a good choice because of the residual it leaves behind even in the course of sanitization.
The best choice for a winemaker is to use Potassium Metabisulfite, which may be used both for sanitization and stabilization. Hence, there is no true need for E223 in the wine cellar.
